Raw Energy balls (guilt free sweet)


On Wednesday i was in total bliss.  After been waiting for a nice food processor to land in my kitchen for a year an a half.  I finally decided to go get one.  It's a Kitchen Aid 7 cup.  The price was a little  high  but i'm a big fan of quality things.  I'm very very happy with my new food processor.

To celebrate the new appliance in my kitchen i chose 3 three different menus. They are all raw.
1. Ginger Almond Nori Rolls:  I have to say this was one of the most amazing dish i've ever made.  Ofcourse, confirmed by my beloved husby...
2. Raw superfood balls (as seen in the picture).  I like to call it energy balls because it's got spirulina and other energy boosters like cacao  for example.
3. The last one, i decided to make a salad dressing that i can store in the fridge for a quick salad mean.  "Kreamy curry dressing"

Today i'll post the recipe for the energy ball first so you can go try.  Oh and no, i didn't create this recipe. I found the recipe on you tube, on rawradiencehealth channel.  But being the way i am, rebelious, and love to explore, i changed a few things on the recipe.

1 cup carob powder
1 cup cacao powder
1 cup cashews
1/4 hemp seeds
1/2 cup coconut oil
1 Tsp spirulina
1/3 cup honey
a few pinches of sea salt
shredded coconut (optional)  I used hemp seeds

*Tsp = Table spoon
tsp = tea spoon

Throw the nuts and seeds into your food processor to meal them first and then follow with the wet ingredients.  This will eventually create a dough.  And then you can start rolling them into balls and roll the ball on either hemp seeds or shredded coconut to make them look prettier.  Finally, put all your balls into a freezer for a few hours.  And wait patiently : )

I love when the balls come out from the freezer, it's got a really hard texture you really have to bite into it.  However my husband loves it when they are soften a little from being in the room temperature of being in the fridge.   I hope all of you try this recipe.  It's a very satisfying guilt free sweet and it's healthy.
